I ate the last of the beet soup for lunch today. It was so good. There’s red beans, chick peas and
kale in here. We had some sourdough bread to got with it, toasted and lathered with lots of butter.
I was a vegetarian for five years and still enjoy eating vegetarian dishes. This one is actually vegan.
What can I say we are a beet loving household. One of my favorite ways to cook beets is to roast
them in the oven and then douse them in balsamic vinegar and honey. Hope to share more of what goes on in
